If one creates different sites with corresponding subnets in site and
services and move the corresponding DC/GCs should there remain in the
Default Site the SRV record of the DC/GCs which were moved to other sites?

The site specific records should move IF you DNS
    is properly replicating.

    It depends.
Usually, and (I think) certainly in a single domain forest,
you should expect to see the SRVs changed to the new site
(assuming there are DCs of the doman in the other sites)
It is possible that, due to what are called the site coverage
SRV records, the DC will still want to register records in
other sites (only when that domain has no DCs in the site).

When in doubt, run netdiag on the DC and also look into the
netlogon.dns file on the DC and see if it lists the records
that you are believing are stale (undeleted).
