With previous versions of Windows, when you accessed Windows Updates you had
the option of selecting the optional updates you didn't want and didn't want
to continue to be asked about. With Windows Updates on Vista, is there a way
to set it so the optional ones you don't want, you don't get asked about each
time you go to the update site?

Yes. Right click on the update and left click on Hide. Use the X in the
upper right corner to close Windows Update. Using Cancel at the bottom seesm
    to ignore your choice
